Chocolate Energy Balls

Serves: 2 dozen balls
  • 1 cup pitted dates
  • 1 cup cashews (or nuts of choice)
  • ¼ cup cocoa powder plus extra for rolling
  • 1 tablespoon coconut oil, melted
  • ⅓ cup chocolate chips
  1. Combine all ingredients in a food processor and whiz until they form a thick paste.
  2. Using a cookie scoop or tablespoon, roll dough into balls and roll the balls in cocoa powder.
  3. Refrigerate in a hermetic container up to 5 days.
